Recipe: seed and nut bars

Just Ella Bella looks at how to make (relatively) healthy snacks for your fussy child


My son is a picky eater of note and his picky eating ways have made me a food ninja who sneaks vitamins and extra calories into meals with the precision of a synchronized swimmer.
These seed bars are one of my secret weapons. They are fairly healthy at 343kj a pop (the mixture makes 12) and have extra iron and protein added (I get this from the app myfitnesspal, which is a great resource if you want to see how healthy your family recipes are).
I call these my five-point seed bars or seed brittle because that is how I remember the recipe, which I came up with by myself through trial and error and left-over baking supplies.
Ingredients
1 tablespoon coconut oil
2 tablespoon chia seeds
3 tablespoons sesame seeds
4 tablespoons chopped peanuts
5 tablespoons brown sugar
Method
Melt coconut oil in a small pot on the stove at a high heat, lower the heat and melt sugar into the coconut oil
Remove from heat and add seeds to the warm, sugary mixture.
You can choose your seeds and nuts but I found this ratio works best for me to get a nice texture.
Work quickly as the mixture hardens fast and flatten into a foil-lined and greased container. Use a small baking tray – 20cm by 10cm makes for thin, crackly brittle.
Cut while warm, then leave to set.
