Peri-peri recipe packs punch at masterclass

It is finally time to put our aprons on and head back to the kitchen with The Herald Cooking Masterclasses, which started on Thursday at Capsicum Culinary Studio in Newton Park.

For the first session, guests were taught the intricate art of Portuguese cuisine.

Guests made peri-peri chicken, pan-fried bread and a special peri-peri sauce led by Capsicum Culinary Studio chef Bernice Warner.

“We always want to make something that’s easy enough for them to replicate and hopefully serve up at a dinner party, being able to say ‘I learnt this at a Herald Masterclass’,” Warner said.

Masterclass regular Carol Julie said she enjoyed all the classes she had attended.

“I enjoy coming. It’s a great opportunity to learn new things and meet new people,” she said.

“My favourite was the Indian class when we made a fish curry.

“I spend a lot of time in the kitchen cooking and baking. I take these dishes home and my family loves them.

“I’ve already booked for the next three classes.”

Guests made dishes single-handedly, following Warner’s instructions to the best of their abilities, with a few student chefs on hand, ready to offer assistance.

The table was set and guests tucked into their peri-peri chicken with bread and rice prepared for them by Warner.

Guests went home with a complimentary bottle of wine courtesy of Three Peaks, the recipe for the Portuguese dish, an apron and a one-month free subscription to HeraldLIVE.

First-time attendee Sharon Townsend took the class with her husband, Craig.

“We decided to try something different and get better ideas from different cuisines to cook,” Townsend said.

“My husband loves spicy food more than I do. He loved the peri-peri sauce we made.”

Chef Warner was happy with the success of the sold-out class.

“We enjoy it as much as they do. It’s nice to put a table together and see them enjoy what they have made,” she said.

The next Herald Cooking Masterclass on July 18 will be Greek-themed, followed by a Mediterranean-themed class on August 1 and the final Cape Malay-themed class on August 15.

The classes run from 6pm to about 8.30pm at the Capsicum Studio, 67 Newton Street, Newton Park.
