If you are one of those on a LDHF (low carb, high/healthy fat) diet, you may already have cauliflower pizza bases. Ring the changes with this recipe for coconut flour pizza by Sally-Ann Creed, from her new book Delicious Low Carb.

Creed is a clinical nutritionist and co-author of The Real Meal Revolution, the “Banting” book which did indeed revolutionise the way many South African families look at food.

Her latest cookery book, Delicious Low Carb, aims to give healthy, affordable and practical recipes for low-carb living. Even though the 100 or so recipes minimise the use of grains, carbohydrates and sugar, they are packed with flavour.

Creed’s advice is simple: buy fresh, unprocessed food and prepare it in your own kitchen. Leave the energy bars, shop-bought biscuits, fizzy drinks and boxed cereals.

Coconut flour pizza base Ingredients 1/2 cup coconut flour 1/4 cup finely grated parmesan cheese 1/2 t salt 1/4 t baking powder 1 t dried mixed herbs or chopped fresh herbs 1/4 garlic powder 2 T finely ground flax seeds (golden or brown) 3 large eggs 2 T coconut oil mozzarella or extra parmesan for topping Method Preheat the oven to 190°C. In a bowl, mix the flour, parmesan, salt, baking powder, herbs, garlic powder and flax seed flour. Stir in the eggs and coconut oil to form a dough. press the dough out thinly onto a greased baking sheet, making three circular pizza based about the size of a side plate. Bake for 20--25 minutes. Remove the pizza base from the oven, add tomato slices or paste together with your favourite pizza toppings. Sprinkle mozzarella or parmesan cheese on top and bake again until the cheese melts.
