Cookbook helps reduce cancer risk


In efforts to help people lower their risk of contracting cancer, the Cancer Association of South Africa (Cansa) has partnered with the B-well brand to develop a cookbook aimed at lowering risk.
The Smart Choice Cookbook is a collection of recipes that focus on healthy cooking methods and ingredients that can positively influence cancer risk reduction. The book covers breakfast, lunch, dinner as well as snacks and treats, with a vegetarian option included in each section. All the recipes were developed with Cansa’s consulting dietitian Megan Pentz-Kluyts.The flavours in the recipes are exciting and explore some of the latest food trends, with readers able to start the day with a Power Green Smoothie Bowl or tuck into a Salad In a Jar for lunch, enjoy Curried Fish with Apricots for dinner and even include a Banana and Cranberry Oat Cookie as an occasional treat.
There are familiar favourites like bobotie and the book has recipes for stock that forms the basis of the soup recipes, but these kinds of basics encourage South Africans to work with fresh produce and try new combinations at home.
B-well marketing manager, Stephen Geldenhuys, said he was excited to see how the collaboration and cookbook could impact positively on people’s lives.

For a healthy summer meal aimed at keeping cancer at bay, the Smart Choice cookbook by Cansa and B-well suggests a chicken and bean wrap.
Chicken and bean wrap
Ingredients
4 skinless free range chicken breast fillet (300g)1 tin (400g) black beans or red kidney beans, drained and rinsed4 tortilla wrapslettuce leaves16 baby tomatoes, halvedFew slices of cucumber1 cup pineapple, chopped1 cup red bell pepper, choppedfreshly ground pepper1 teaspoon chopped garlic8 teaspoons B-well blended canola and olive oil blend2 teaspoons naturally brewed less sodium Soya sauce4 heaped tablespoons grated mozzarella
Method
1. Cut chicken breast into strips and stir fry while seasoning with garlic and ground pepper. Stir fry until cooked through and light golden brown. Remove from heat.
2. Cut tomato in half.
3. Cut cucumber into thin slices
4. Cut pineapple into little pieces
5. Cut red pepper into long thin slices.
6. Mix the blended canola and olive oil blend and soya sauce together.
7. Heat tortilla for few seconds in microwave until soft.
8. Lie tortilla flat. First place the lettuce and then the other fresh fruit, vegetables and beans.Place chicken pieces on top.
9. Fold the tortilla and garnish with the blended canola and olive oil blend and soyasauce mix and grated cheese.
