Ouma's treat not forgotten

Sammy Ray Davids was born on September 12 1997 and spent her childhood in Hillside before the family relocated to Westering.


Since her fourth birthday Sammy remembers being treated to chocolate cupcakes made with great grandmother Ouma Hassie's recipe.


She said every year she would get her favourite chocolate cupcakes made by her grandmother Lydia Hendricks, daughter of Ouma Hassie.


Ouma Hassie passed away in 2002 but the famous recipe lives on.


Sammy Ray said she cannot do without her favourite birthday treat and her grandmother Lydia made sure she would not be disappointed.


Fast forward to the present and Sammy Ray, 15, now makes her own chocolate cupcakes using the same recipe that Ouma Hassie did when she was a little girl. She enjoys the fourth generation cup cakes on her birthday.


Ingredients:


2 eggs;


1 cup sugar;


1 cup oil;


2 cups self-raising flour;


1 teaspoon bicarbonate of soda;


1 teaspoon creme of tarter;


1/2 cup cocoa;


1/2 cup boiling water;


1 tsp vanilla essence


Icing Sugar


50g icing sugar;


teaspoon boiling water;


5g softened butter;


30g cocoa;


5ml vanilla essence.


Method:


Cake:


Beat eggs and oil with an electric beater until thick and creamy. Add oil and mix. Sift the self-raising flour, bicarbonate of soda and creme of tarter into wet mixture. Mix cocoa, water and vanilla essence together then add to the cake mixture combine and mix together. Put in the oven for about 20 minutes to bake on 180°C.


Icing sugar:


Beat the butter with an electric beater until light and fluffy. Gradually add the icing sugar and cocoa, beating well after each addition, then add the water and beat well. Enough for about 24 cupcakes.
