RECIPE: Eggless lamingtons
Something sweet for people who are fasting and don't eat eggs.
Ingredients:
- 2 x cups cake flour.
- 1 x cup castor sugar.
- ½ x cup cooking oil.
- ½ x tsp salt.
- 1 x tsp vanilla essence.
- 1 x tbsp. white vinegar.
- 1 x cup water.
- 1 x tsp bicarbonate of soda.
- Desiccated coconut for rolling.
Method:
- Sift together, salt, flour and bicarbonate of soda.
- In another bowl, beat sugar, water, oil , vinegar and vanilla essence together.
- And the water mixture to the flour mixture.
- Mix well till everything is well combined.
- Pour into a greased cake tin.
- Bake in a preheated oven @180 degrees for 25 – 30 minutes or until the golden and the top pick comes out clean
Ingredients for the chocolate icing:
- 1 x cup water.
- 1 x cup castor sugar.
- 9 x tbsp. cocoa powder.
Method for icing:
- Mix all the ingredients in a pot.
- Let the pot boil and the contents bubble and boil ( the mixture should rise and almost be ready to boil out over the top of the pot).
- Remove from heat and let cool.
- Once cool, cut the cake into squares.
- Dip the squares in the coco mixture let the excess coco mixture drip off.
- Roll into the coconut.
- Place on a cooling rack, which prevents the coconut on the bottom on the cake from becoming mushed up….enjoy with a cup of tea
