RECIPE: Tangy BBQ Pork Ribs

Tomorrow is National Heritage Day or as some like to call it, National Braai Day. So get your wood, braai-tongs and marinade ready because this week's recipe, sponsored by Prestons Liquor Stores, is sure to get you into the mood to celebrate your heritage. Tangy BBQ Pork Ribs Expected cooking time: 40 mins. Serves: 4
Ingredients:
- 1,5 kg pork spare ribs
- ½ cup honey
- 2 cups Castle Barbecue Marinade (reserve ½ a cup for basting)
- Preheat oven to 180°C.
- Brush 1½ cups of the sauce over the ribs and cover with foil.
- Pre-cook for 20 minutes.
- Remove and brush with remaining marinade.
- Braai the ribs over moderately hot coals for 5–10 minutes (with the bone-side on the coals for most of the time) or until the sauce is glazed and the meat has caramelised and slightly charred on the tips.
