Oriental beef stir-fry

2 tablespoons soy sauce

2 tablespoons hoisin sauce

2 tablespoons mirin

1 tablespoon water

1 tablespoon cornflour

2 tablespoons sesame oil

2 teaspoons honey

200g sirloin steak, thinly sliced

handful of small broccoli florets

½ red pepper, deseeded and cut into strips

75g baby corn, thinly sliced

60g sugar snap peas or 1 pak choi, thinly-sliced

salt and pepper


Mix the mirin, soy sauce, hoisin sauce, water and cornflour together in a small bowl until smooth. Heat a wok until hot. Coat the steak slices in 1 tablespoon of sesame oil and the honey and season with salt and pepper. Quickly fry over high heat until brown and just cooked. Transfer to a plate.

Heat the remaining tablespoon of sesame oil in the pan. Add the broccoli and red pepper and stir fry for 3 minutes. Add the corn and sugar snap peas, if using, and fry for another 2 minutes. Pour in the sauce and season to taste. Add the pack choi, if using, and then the steak slices. Toss together until the sauce has coated the vegetables and beef.

Serve at once with rice or noodles.
