Really great Gatsby

THIS delicious and easy to prepare gatsby sandwich by Jade de Wall, from her book Food Jamming with Jade, serves four.

INGREDIENTS:

2 potatoes, peeled and sliced into chips

vegetable oil, for deep frying

1 tablespoon (15 ml) extra virgin olive oil

1 tablespoon (15 ml) masala powder

4 minute steaks

salt and freshly ground black pepper

1 tablespoon (15 ml) mayonnaise

1 tablespoon (15 ml) chutney

1 tablespoon (15 ml) tomato sauce

1 French loaf, sliced lengthwise

2 tomatoes, sliced salad leaves

METHOD:

Start by deep-frying the chips in the vegetable oil until cooked and golden.

Heat a small pan over high heat and add the olive oil. Sprinkle the masala over the steaks, season to taste and fry for 1 minute on each side.

Mix the mayonnaise, chutney and tomato sauce together. Butter the French loaf on the inside and then layer with some of the sauce mixture. Build the gatsby by adding the steak, chips tomatoes and salad leaves.
