EVERTON Hansen, 29, of Westering, was among those who took a bit of flak for his Come Dine With Me cooking prowess from fellow contestants.

Even so, Everton says he and diners Trish Difford, Claerwen Hart and Theo Scholtz “hit it off” and have got together several times since their episode was aired.

“I especially see a lot of Bubba, aka Trish. She and I have become big mates,” he chuckled.

Everton came up with his Christmas starter by rummaging through his fridge and “getting creative”.

His Christmas Day plans include setting up trestle tables in his lounge and dining room for up to 40 family members. “It’s a cold lunch and everyone chips in by bringing a dish.”

SALMON BRUSCHETTA WITH ROASTED PEPPERS, TOMATO AND BASIL

Ingredients

1 ciabatta

Olive oil

Strips of roasted red pepper (from a jar is fine)

One tomato, seeds removed and finely diced

Few sprigs of basil

Red onion, finely chopped

One portion Norwegian salmon, pan-fried and flaked

Balsamic vinegar

Method

Pre-heat grill. Slice bread and brush both sides with oil. Grill until golden. Mix salmon with peppers, tomato, basil and onion. Season to taste. Sprinkle on toast and drizzle with vinegar.
