RECIPE: Prunes stuffed with goats cheese and wrapped in prosciutto

Ingredients

  • 100g soft goats cheese
  • 20 prunes, pitted
  • 20 slices speck or 10 slices prosciutto, sliced in half lengthwise
You will need
  • 20 toothpicks or bamboo skewers
Method

1.    Place the cheese in a bowl and soften with a fork until softened. Place a generous teaspoonful of cheese in each prunes. Roll the prunes in the speck or prosciutto and secure with a toothpick. Serve

  • These can be prepared up to a day in advance (cover and store in the refrigerator).
  • Or a variation ground walnuts or almonds can also be added to the cheese for a nuttier flavour.
